Fluffy Snickerdoodles

Dress up a simple sugar cookie by rolling them in a cinnamon sugar mixture. The fine grains of the cinnamon and sugar add an appealing contrast to the soft pillowy center of the cookies.

INGREDIENTS

  • 2 3/4 cups flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 cup butter, unsalted, at room temperature

  • 1 3/4 cups sugar

  • 2 large eggs

  • 2 teaspoons vanilla

  • 1 teaspoon cinnamon

INSTRUCTIONS

  • Preheat oven to 350°F. Line cookie sheets with parchment paper.

  • Whisk together flour, baking powder and salt. Set aside. In a large bowl, combine the butter and 1 1/2 cups sugar. Beat until well-blended, about 1 minute. Add the eggs and vanilla until eggs are completely incorporated. Slowly add the flour mixture.

  • In a small bowl, stir together the remaining 1/4 cup sugar and cinnamon. Scoop up rounded tablespoons of the dough then roll in the cinnamon-sugar mixture.

  • Bake until the edges are lightly browned but the tops are barely colored, 10-12 minutes.

  • Let the cookies cool for 5 minutes before moving to wire racks to cool completely.

Makes 36 cookies
