Fluffy Snickerdoodles
Dress up a simple sugar cookie by rolling them in a cinnamon sugar mixture. The fine grains of the cinnamon and sugar add an appealing contrast to the soft pillowy center of the cookies.
INGREDIENTS
2 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup butter, unsalted, at room temperature
1 3/4 cups sugar
2 large eggs
2 teaspoons vanilla
1 teaspoon cinnamon
INSTRUCTIONS
Preheat oven to 350°F. Line cookie sheets with parchment paper.
Whisk together flour, baking powder and salt. Set aside. In a large bowl, combine the butter and 1 1/2 cups sugar. Beat until well-blended, about 1 minute. Add the eggs and vanilla until eggs are completely incorporated. Slowly add the flour mixture.
In a small bowl, stir together the remaining 1/4 cup sugar and cinnamon. Scoop up rounded tablespoons of the dough then roll in the cinnamon-sugar mixture.
Bake until the edges are lightly browned but the tops are barely colored, 10-12 minutes.
Let the cookies cool for 5 minutes before moving to wire racks to cool completely.
