Simple Buttermilk Pancakes

A dish fit for a slow Sunday morning or a late night treat.

RECIPE

Ingredients:

  • 1/2 cup syrup

  • 1/2 teaspoon cayenne

  • 2 cups all-purpose flour

  • 3 tablespoons sugar

  • 1½ teaspoons baking powder

  • 1½ teaspoons baking soda

  • 1¼ teaspoons kosher salt

  • 2½ cups buttermilk

  • 2 large eggs

  • 3 tablespoons unsalted butter, melted

Instructions:

  • FOR THE PANCAKES: Combine flour, sugar, baking powder, baking soda, and salt in a large bowl. Beat together buttermilk, milk, eggs, and melted butter in a separate bowl. Pour the wet mixture into the dry mixture; use a wooden spoon to mix until it's just blended together. The batter will be a little lumpy which is what you want.

  • Pre-heat a griddle or large skillet and spray with cooking spray. Using a 1/4 cup measure scoop and pour the batter onto the preheated griddle, using approximately 1/2 cup for each pancake. Cook until bubbles appear on the surface, 1 to 2 minutes; flip with a spatula and cook until browned on the other side. Repeat with remaining batter.

  • ASSEMBLY: Stack your pancakes and pour the desired amount of syrup or top with your favorite jam and powdered sugar. My favorite is a crimson currant jam I get from my local farmers market.
