Bruleed Grapefruit with Mascarpone and toasted Pistachios
Perhaps this more a treat for breakfast than an actual balanced meal….however I have enjoyed this a few times myself for breakfast and it is wonderful. Sweet, tangy, creamy, nutty it balances all the right textures in each lovely bite.
RECIPE
Ingredients:
1/2 grapefruit
1 tablespoon sugar
Salt
1 heaping tablespoon mascarpone
Toasted pistachios, for garnish
Instructions:
Halve each grapefruit crosswise, and cut a thin slice off the bottom of each half to stabilize the pieces. Remove all seeds from the grapefruit, and loosen the segments with a paring knife.
Sprinkle the half evenly with the sugar. Using a blowtorch or placing it under your broiler, melt the sugar to form a golden brown and crispy surface. Sprinkle the hot sugar with the salt. Top with a dollop of mascarpone and sprinkle on some toasted pistachios. Enjoy immediately.
