Chili Crunch Cumuber Toast

Simple, quick and jam packed with flavor for breakfast, lunch or a snack. It’s versatile and easy to adjust the ingredients to the way you like best. I love the freshness from the lemon and cucumber and the spice and creaminess from the chilis and cream cheese spread.

RECIPE

Ingredients:

  • ½ a cucumber, thinly sliced

  • Juice and zest from half a lemon

  • White wine vinegar

  • Salt & Pepper to taste

  • Sugar

  • Chili Crunch

  • Cream Cheese

  • Your favorite bread

  • Extra virgin olive oil

Instructions:

  • This is one of my no-recipe recipes (a shout-out to one of my favorite recipe writers Sam Sifton). In a bowl toss the cucumber slices, lemon juice and zest, white wine vinegar, salt and pepper to taste and a good-sized pinch of sugar. Toss to combine and set aside to marinate for a few minutes. Throw a couple of slices of your favorite bread into the toaster. Once done to your desired toastiness, spread on a nice layer of cream cheese and line the marinated cucumber slices in rows. Top with chili crunch and a drizzle of extra-virgin olive oil.
